Tortellini Soup

- 2 shallots diced
- 1 yellow onion diced
- 1 garlic clove minced (or frozen ginger cube)
- 1 pound Jenny-O Italian turkey sausage Italian seasoned turkey also works well!
- 2 13.5 oz can fire roasted tomatoes with garlic
- 1 32 oz container bone broth + 1-2 cups more depending how much broth you want
- 1 5 oz package spinach
- 1-2 T red pepper flakes depending of spice preference
- 2 T Aglio olio Trader Joe’s seasoning, or Italian seasoning
- 1 cup cottage cheese good culture full fat, blended
- 2 8 oz packages tortellini I used artisola spinach and cheese from Whole Foods
- Parmesan cheese to top
Instructions
- In a large sauce pan (I used our Dutch oven), add turkey sausage, shallot, garlic and onion. Add a little bit of the red pepper flakes and Italian seasoning.
- After it’s thoroughly cooked, add in tomatoes, bone broth and seasonings. (This is where I taste until I get the desired flavor! I added quite a bit of garlic, red pepper flakes and Italian seasoning. - salt amount will depend on type of broth used). Cover and let simmer for 10-15 minutes.
- Add in the spinach and tortellini, stir and bring to a boil. Add in cottage cheese and stir until well combined and the spinach is wilted.
- Top with Parmesan cheese and enjoy!
