Buffalo Cauli Bowls
This bowl is hearty but completely nourishing. Loaded bowls are my fav way to pack in veggies, nutrients, fiber, and protein all in one! This meal will be ready in less than 20 minutes, and a really easy cleanup!

Ingredients
- 2 package of ground chicken
- 1 yellow onion diced
- 4 stalks celery chopped
- 2 cup shredded carrots
- 2 tbsp ranch seasoning Trader Joe’s
- 1 bag frozen riced cauliflower
- 1.5 cup rice prepared according to package
- 1 cup Buffalo Sauce Primal Kitchen is the best
- 1/2 cup Colby and Monterey Jack Cheese
- 1/2 cup cottage cheese or cream cheese
- 1 tbsp butter
Instructions
- Add butter, celery, and onion to a medium saucepan. Sauté for 3-5 minutes or until slightly tender. Add ground chicken and carrots
- Once the ground chicken is about halfway cooked, add frozen riced cauliflower and ranch seasoning.
- Add the buffalo sauce and cottage cheese.
- After the rice is cooked add and stir well.
- Serve in a bowl and enjoy!
