Spinach and Artichoke Cups

Ingredients
- 1 yellow onion diced
- 2 garlic cloves minced
- 1 T olive oil
- 1 5 oz bag spinach roughly chopped
- 1 can quartered artichokes roughly chopped
- 1 block of cream cheese
- 1/4 cup parm
- 1/2 cup Monterey Jack cheese
- Salt pepper and garlic
- 3 boxes of phyllo cups
Instructions
- Saute the onion and garlic until tender in olive oil
- Add the artichokes and sautée 5 minutes
- Add in the spinach, and cook until slightly wilted
- Stir in the cream cheese and shredded cheese
- Stir until well combined and melted
- Spoon a small amount into each phyllo cup
- Bake at 350 for 20 minutes
