Preheat oven to 400
Cut the bottom and the top off of the acorns squash to have a flat surface
Cut the squash vertically
Scoop out the seeds
Brush both halves with olive oil and place in the oven. Roast for 45 minutes or until tender
In the mean time, add onion and celery to a saucepan, sauté in butter for a few minutes and then add ground turkey
Once the turkey is cooked, add seasonings, apples, cranberries. Stir and add in bread crumbs. Sauté a few minutes
Once everything is cooked spoon into acorn squash. Top with parmesan cheese
Place back in the oven to melt the cheese
