Add diced sweet potatoes to a bowl and microwave for 2–3 minutes to soften.
In a large skillet, add ground beef and cook until mostly browned.
Add peppers, onion, sweet potatoes, taco seasoning, and salsa.
Cover and let simmer for 10–15 minutes.
Stir and continue cooking if peppers are still firm.
To serve, top with your favorite toppings—we used cilantro, pickled red onions, cotija cheese, and avocado. Enjoy!
