Spinach and Artichoke Cups

Ingredients

  • 1 yellow onion diced
  • 2 garlic cloves minced
  • 1 T olive oil
  • 1 5 oz bag spinach roughly chopped
  • 1 can quartered artichokes roughly chopped
  • 1 block of cream cheese
  • 1/4 cup parm
  • 1/2 cup Monterey Jack cheese
  • Salt pepper and garlic
  • 3 boxes of phyllo cups

Instructions

  • Saute the onion and garlic until tender in olive oil
  • Add the artichokes and sautée 5 minutes
  • Add in the spinach, and cook until slightly wilted
  • Stir in the cream cheese and shredded cheese
  • Stir until well combined and melted
  • Spoon a small amount into each phyllo cup
  • Bake at 350 for 20 minutes
