Buffalo Chicken Tacos

Ingredients

  • 2 lbs ground chicken
  • 1 cup buffalo sauce
  • 2 tbsp ranch seasoning
  • 12 oz frozen riced cauliflower
  • 5 oz container or 1/2 cup cottage cheese
  • street taco tortillas
  • cheese

Instructions

  • Preheat oven to 350
  • Add ground chicken to large sauce pan, cook thoroughly
  • After its cooked add buffalo sauce, ranch, cauliflower and cottage cheese, stir and cook 5-10 minutes or until thoroughly heated
  • On a large baking sheet, lay out tortillas, sprinkle with cheese, top with buffalo mixture and then top with more cheese
  • Fold over and bake for 15-20 minutes or until golden brown
  • Serve with your fav ranch- we love spouts brand!
