Ingredients
- 1 cup couscous cooked
- Raw shrimp seasoned with blackening seasoning (I use frozen wild-caught)
- 2 cups chopped kale
- 1 red bell pepper diced
- 2 –3 large cloves garlic minced
- Juice of ½–1 lemon to taste
- 1 cup freshly grated Parmesan
- Olive oil
- Garlic salt aglio olio seasoning blend, red pepper flakes
Instructions
- Heat olive oil in a pan and sauté garlic, kale, and bell pepper until softened.
- Add in your seasonings and stir to combine.
- Mix in the cooked couscous and fresh lemon juice.
- Stir in the Parmesan until everything is well combined and creamy.
- Transfer to a bowl, then top with your cooked shrimp.
- Finish with extra Parmesan and enjoy ✨
Notes
This one came together in under 20 minutes and is so good. It’s the perfect balance of fiber-rich carbs, protein, and healthy fats — a super satisfying, nourishing meal for spring and summer!
I used the Harvest Grains blend from Trader Joe’s (pearled couscous, orzo, baby garbanzo beans, and red quinoa), and it’s been on repeat lately 🙌
