Stuffed Acorn Squash

Ingredients
- 1 T butter
- 1 pound ground turkey
- 1 yellow onion diced
- 2 stalks celery diced
- 1 honey crisp apple chopped (I did about 3/4s of it cause it was big)
- 1/4 cup cranberries
- 1/4 cup bread crumbs
- Everything but the left overs seasoning trader joes
- Soffritto seasoning trader joes
- 3 acorn squash
- Parmesan cheese
Instructions
- Preheat oven to 400
- Cut the bottom and the top off of the acorns squash to have a flat surface
- Cut the squash vertically
- Scoop out the seeds
- Brush both halves with olive oil and place in the oven. Roast for 45 minutes or until tender
- In the mean time, add onion and celery to a saucepan, sauté in butter for a few minutes and then add ground turkey
- Once the turkey is cooked, add seasonings, apples, cranberries. Stir and add in bread crumbs. Sauté a few minutes
- Once everything is cooked spoon into acorn squash. Top with parmesan cheese
- Place back in the oven to melt the cheese
