Stuffed Acorn Squash

Ingredients

  • 1 T butter
  • 1 pound ground turkey
  • 1 yellow onion diced
  • 2 stalks celery diced
  • 1 honey crisp apple chopped (I did about 3/4s of it cause it was big)
  • 1/4 cup cranberries
  • 1/4 cup bread crumbs
  • Everything but the left overs seasoning trader joes
  • Soffritto seasoning trader joes
  • 3 acorn squash
  • Parmesan cheese

Instructions

  • Preheat oven to 400
  • Cut the bottom and the top off of the acorns squash to have a flat surface
  • Cut the squash vertically
  • Scoop out the seeds
  • Brush both halves with olive oil and place in the oven. Roast for 45 minutes or until tender
  • In the mean time, add onion and celery to a saucepan, sauté in butter for a few minutes and then add ground turkey
  • Once the turkey is cooked, add seasonings, apples, cranberries. Stir and add in bread crumbs. Sauté a few minutes
  • Once everything is cooked spoon into acorn squash. Top with parmesan cheese
  • Place back in the oven to melt the cheese
