Chopped salad blend
I used one with cabbage, red cabbage, carrot, and kale

prepared according to package (I used pho rice noodles from lotus foods)

thinly sliced

chopped and then cooked in Thai peanut sauce- I like Bangkok peanut sauce
fresh cilantro

Instructions
Cook your chicken in the Thai peanut sauce
Make the dressing
Assemble the salad
Mix and serve

Great leftover and holds well in the fridge for lunches the next day!
