AVOCADO MANGO SALSA:
add all ingredients to a large bowl and stir until well combined. Makes enough for about 4 salads.
CILANTRO LIME VINAIGRETTE
add all ingredients to blender and pulse well combined. Makes enough for about 4-6 salads.
ASSEMBLE SALAD:
Toss the greens in the cilantro lime dressing and then assemble the greens into a serving bowl. Add 2 large spoonfuls of the salsa, ⅓ cup of quinoa, and the grilled shrimp!
