Ingredients

  • AVOCADO MANGO SALSA INGREDIENTS:
  • 2 cups fresh mango chopped
  • 1 red bell pepper chopped
  • 1 avocado chopped
  • 1/2 red onion chopped
  • 1/4 cup cilantro chopped
  • Juice from 1-2 limes
  • 1 tsp fresh jalapeño chopped
  • CILANTRO LIME VINAIGRETTE:
  • 1/2 cup olive oil
  • Juice from 1-2 limes
  • 1/3 cup of cilantro
  • 1 garlic clove
  • 1 T honey
  • Water to thin
  • SALAD INGREDIENTS:
  • Spring mix roughly chopped
  • Arugula roughly chopped
  • Quinoa prepared and chilled
  • Grilled wild caught shrimp seasoned cajun seasoning and cooked in melted butter

Instructions

  • AVOCADO MANGO SALSA:
  • add all ingredients to a large bowl and stir until well combined. Makes enough for about 4 salads.
  • CILANTRO LIME VINAIGRETTE
  • add all ingredients to blender and pulse well combined. Makes enough for about 4-6 salads.
  • ASSEMBLE SALAD:
  • Toss the greens in the cilantro lime dressing and then assemble the greens into a serving bowl. Add 2 large spoonfuls of the salsa, ⅓ cup of quinoa, and the grilled shrimp!
