Ingredients
- AVOCADO MANGO SALSA INGREDIENTS:
- 2 cups fresh mango chopped
- 1 red bell pepper chopped
- 1 avocado chopped
- 1/2 red onion chopped
- 1/4 cup cilantro chopped
- Juice from 1-2 limes
- 1 tsp fresh jalapeño chopped
- CILANTRO LIME VINAIGRETTE:
- 1/2 cup olive oil
- Juice from 1-2 limes
- 1/3 cup of cilantro
- 1 garlic clove
- 1 T honey
- Water to thin
- SALAD INGREDIENTS:
- Spring mix roughly chopped
- Arugula roughly chopped
- Quinoa prepared and chilled
- Grilled wild caught shrimp seasoned cajun seasoning and cooked in melted butter
Instructions
- AVOCADO MANGO SALSA:
- add all ingredients to a large bowl and stir until well combined. Makes enough for about 4 salads.
- CILANTRO LIME VINAIGRETTE
- add all ingredients to blender and pulse well combined. Makes enough for about 4-6 salads.
- ASSEMBLE SALAD:
- Toss the greens in the cilantro lime dressing and then assemble the greens into a serving bowl. Add 2 large spoonfuls of the salsa, ⅓ cup of quinoa, and the grilled shrimp!
