Veggie Packed Italian Sausage + Pea Pasta

Ingredients

  • 1 package bowtie pasta prepared according to package
  • 1 lb Italian sausage
  • 2 shallots diced
  • 1 10 oz container of spinach roughly chopped
  • Frozen peas approx 1/2 cup
  • *Alfredo sauce:
  • 1/2 cottage cheese
  • 1/3 cup milk
  • 4 oz Parmesan cheese
  • Aglio spicy garlicy seasoning

Instructions

  • Cook the sausage, remove from pan and set aside
  • Add shallots, cook for 3-5 minutes
  • Add the spinach and peas
  • After the spinach is wiled, add back in the sausage. Cook for a few minutes and once the pasta is done add the pasta + the sauce
  • *For the Alfredo Sauce:
  • Blend Good Culture cottage cheese, parmesan cheese, milk, aglio olio spicy garlicy seasoning (trader joes), red pepper flakes (if you like spice) in a blender until smooth
  • Stir to combine and serve immediately!
