Veggie Packed Italian Sausage + Pea Pasta

- 1 package bowtie pasta prepared according to package
- 1 lb Italian sausage
- 2 shallots diced
- 1 10 oz container of spinach roughly chopped
- Frozen peas approx 1/2 cup
- *Alfredo sauce:
- 1/2 cottage cheese
- 1/3 cup milk
- 4 oz Parmesan cheese
- Aglio spicy garlicy seasoning
Instructions
- Cook the sausage, remove from pan and set aside
- Add shallots, cook for 3-5 minutes
- Add the spinach and peas
- After the spinach is wiled, add back in the sausage. Cook for a few minutes and once the pasta is done add the pasta + the sauce
- *For the Alfredo Sauce:
- Blend Good Culture cottage cheese, parmesan cheese, milk, aglio olio spicy garlicy seasoning (trader joes), red pepper flakes (if you like spice) in a blender until smooth
- Stir to combine and serve immediately!
