Ingredients

  • *Thai peanut sauce:
  • 1/3 cup soy sauce
  • 1/3 cup peanut butter
  • 3 tbsp rice wine vinegar
  • 2 tbsp honey or brown sugar
  • 1 tbsp sriracha
  • Juice from 1 lime
  • *Salad ingredients:
  • Chopped salad blend I used one with cabbage, red cabbage, carrot, and kale
  • 1 package rice noodles prepared according to package (I used pho rice noodles from lotus foods)
  • 1 cup edamame
  • 1 red bell pepper thinly sliced
  • 1 lb chicken chopped and then cooked in Thai peanut sauce- I like Bangkok peanut sauce
  • fresh cilantro chopped
  • peanuts chopped

Instructions

  • Cook your chicken in the Thai peanut sauce
  • Make the dressing
  • Assemble the salad
  • Mix and serve

Great leftover and holds well in the fridge for lunches the next day!
