Cold Noodle Thai Chicken Salad

Ingredients
- *Thai peanut sauce:
- 1/3 cup soy sauce
- 1/3 cup peanut butter
- 3 tbsp rice wine vinegar
- 2 tbsp honey or brown sugar
- 1 tbsp sriracha
- Juice from 1 lime
- *Salad ingredients:
- Chopped salad blend I used one with cabbage, red cabbage, carrot, and kale
- 1 package rice noodles prepared according to package (I used pho rice noodles from lotus foods)
- 1 cup edamame
- 1 red bell pepper thinly sliced
- 1 lb chicken chopped and then cooked in Thai peanut sauce- I like Bangkok peanut sauce
- fresh cilantro chopped
- peanuts chopped
Instructions
- Cook your chicken in the Thai peanut sauce
- Make the dressing
- Assemble the salad
- Mix and serve

Great leftover and holds well in the fridge for lunches the next day!
